Shallow Shaft Wine Dinners

Shallow Shaft - Alta RestaurantsThe Shallow Shaft Restaurant is pleased to continue it’s successful history of offering Little Cottonwood Canyon’s skiers, riders, and wine lovers premiere wine tasting events. Winner in 2011 and 2015 of Salt Lake Magazine’s Dining Awards “Best Wine List,” The Shallow Shaft Restaurant prides itself on presenting some of the world’s best wine makers to the state of Utah.  Wine Coordinator Peri Ermidis and Executive Chef Cole Hunt are teaming up to create a great line up of wine makers and unique menus.

Thursday, Feb. 9th: Duckhorn Vineyards

The Shallow Shaft Restaurant is excited to kick off the 2017 wine dinner events with Napa Valley favorite, Duckhorn Wine Company. Featuring wines from throughout their portfolio, including labels such as Decoy, Canvasback, Migration, and Goldeneye, this is a must attend event for any wine lover and those familiar with the Duckhorn brand. On hand for the evening will be the Chief Operations Officer for Duckhorn Wine Company, Zach Rasmuson, who will present each wine and answer any questions. Our Executive Chef, Cole Hunt, has planned a fantastic menu to match the depth and character of each wine pairing. This event will feature five wines and pairings from Chef Cole and will be begin at 6:30pm. Cost: $150 per person

Menu:

1st Course: Hamachi Sashimi. Jalapeno, Red Bell Pepper, Cilantro Aioli, Nam Prik Pao, Kumquat Puree

Pairing: Decoy Sauvignon Blanc

2nd Course: Pan Seared Diver Scallop w/ Pancetta. Braised Artichoke and Chipotle Crema

Pairing: Migration Chardonnay

Entree Course 1: Seared Muscovy Duck Breast w/ Portabello. Crisp Pork Belly, Watercress, Fried Sage

Pairing: Goldeneye Pinot Noir

Entree Course 2: Kashmiri Rack of Lamb. Morgan Valley Lamb Petit Rack of Lamb, Curried Potato, Pistachio, Candied Celery and Basil shallow_shaft1Oil

Pairing: Canvasback Cabernet Sauvignon

Dessert Course: Foie Gras Ice Cream w/ Apricot Puree & Chocolate Tuille

Pairing: Duckhorn Late Harvest Sauvignon Blanc

Wednesday, March 1st: Neal Michaelis of Delayed in Glass

Long time friend of Wine Coordinator Peri Ermidis, the Shallow Shaft is very excited to bring Neal back to Alta for what is quickly becoming an annual tradition. New this year, they’ll be featuring Neal’s Syrah and GSM blends with their normal menu and several specials. Cost will be a la carte and Neal will be on hand to introduce his wines to anyone who orders!

Tuesday, March 7th: Will Bucklin of Bucklin Vineyards

One of the Shallow Shaft’s absolute favorite wine makers, Will Bucklin of Bucklin Vineyards, will be on hand to present his unique approach to producing some of California’s best wines.  Priding himself on producing field blends from Sonoma County’s oldest vineyard, many of Will’s grapes are dry farmed from the oldest vines in the state. The Shallow Shaft be featuring his best work with a special pre fixed menu for the evening.  Menu and pricing TBD.
